Hotcakes (aka pancakes)
Living on a farm and having an abundance of eggs and milk I am
always finding ways to put them to good use. Who doesn't love pancakes? These are great on Saturday or Sunday mornings and we often eat breakfast for dinner on those occasions our farm chores run late. Here is our favorite family recipe. Hope

Ingredients:
1 1/2 cups all purpose flour
2 large or 3 small/med eggs
3 tsp of baking powder
1/2 scant tsp salt
3 tbsp. sugar
1 tsp each of vanilla and maple extract
3 tbsp. oil (I use mild olive)
approx. 1 1/2 cups milk (I will explain this
later)
Directions:
Mix all dry ingredients and afterwards make a well in the center.
Add eggs to it as well as oil and extracts. Lightly whisk and start incorporating milk. You will use 1 1/2 cups approximately. I do not measure. I just add milk until you get a cake
batter consistency. Thicker batter for thicker pancakes and thinner batter for thin pancakes. Cook in a hot greased pan on med/low. I oil the pan with olive oil or butter between every
pancake cooked and they always come out golden and perfect . If the pan gets too hot turn it off for a few minutes so you don't burn your pancakes. Note: I hand mix my batter just until the
lumps are gone. Over mixing with a blender will make your pancakes tough.
